Quiche lorraine


For 8 people

  • To prepare the dough:
  • Flour - 250 g
  • Powder sugar - A pinch
  • Salt - A pinch
  • Unsalted butter - 125 g
  • Water - 50 ml
  • Egg yolk - 1
  • To prepare the filling:
  • Sliced turkey bacon - 125 g
  • Black pepper - To taste
  • Nutmeg - ½ teaspoon
  • Eggs - 2
  • Egg yolks - 2
  • Cream - 200 ml
  • Milk - 200 ml


Preheat the oven to 180 degrees C.

To prepare the dough: in the Masterchef Gourmet stainless steel bowl, combine the flour with the powder sugar and salt.

Add the butter and knead the ingredients using the dough hook until well combined.

In a bowl, whisk the egg yolk and water then pour the mixture gradually over the flour mixture. Beat well.

Knead the dough with your hands and shape into a flat disk.

Put it in a bowl and cover with plastic wrap. Leave to rest for 15 minutes.

Stretch the dough on a solid floured surface then flatten using a rolling pin to form a circle.

Place it onto a pie pan and press to fit then trim the edges.

Fill the pie with dried beans and bake for 12-14 minutes.

Remove the beans and bake again for 8-10 minutes. Allow to cool.

To prepare the filling: heat a skillet and cook the turkey bacon for 5 minutes until crispy.

Remove from heat and place on a plate lined with paper towels to absorb the excess fat.

Arrange the bacon slices evenly over the bottom of the baked crust.

In a bowl, whisk the eggs and egg yolks then add the cream and milk. Season with black pepper and nutmeg. Pour the mixture into the crust.

Bake the quiche in the preheated oven for 30-35 minutes until golden.
