Ingredients

For 6 people

  • Dried fava beans (or chickpeas): 300 g
  • Onions: 4
  • Garlic: 2 cloves
  • Olive oil: 50 ml
  • Paprika: ½ teaspoon
  • Cumin: ½ teaspoon
  • Salt
  • Pepper

Instructions

Blanch the fava beans for 3 to 4 min, rinse under cold water and remove the skin.

Soak them for 24 hours at room temperature, making sure they are completed covered with water.

Drain and rinse. Put them in a pot, add garlic and two peeled and chopped onions, a teaspoon of salt and 25 ml olive oil and cover with water.

Bring to a boil; reduce the heat and leave to simmer for 20 to 30 minutes until the fava beans are tender.

Drain and set the cooking water aside. Leave to cool for about ten minutes.

Put the fava beans, the cooked onions and garlic in the blender jug.

Add a little cooking water and run the appliance on speed 1. Then increase the speed gradually to 5 to get a smooth mixture.

Add the cooking water gradually until the desired consistency is reached. Adjust seasoning to taste.

Peel and chop the other two onions finely. Fry them in the pan with 25 ml olive oil.

Before serving, place the onions and the two spices on the plates.
