Quick easy vanilla cupcakes
For 9 people
- 1 cup + 2 tbsp all-purpose flour
- ½ cup milk
- 1 egg white
- 1 egg yolk
- 1¼ tsp baking powder
- ¾ cup sugar
- 1/3 cup butter at room temperature
- ¼ tsp salt
- 1½ tsp vanilla extract
- 1¼ cup chocolate buttercream
Preheat the oven to 180⁰C. Line a cupcake mold with cupcake paper.
In a bowl, combine flour, baking powder and salt. Set aside.
In your kitchen machine, beat the egg white using the whisk attachment on high speed until stiff peaks form. Put it in a bowl and set aside.
Using the paddle attachment, beat the butter until it’s soft and creamy.
Add sugar and keep beating until all ingredients are combined.
Add the egg yolk and the vanilla essence. Continue mixing until combined.
Gradually add the flour mixture and the milk, alternating between them.
Fold the whipped egg white into the mixture.
Pour the batter into the cupcake molds and bake for 21 minutes.
Take the cupcakes out of the oven. Let them cool at room temperature.
Decorate with chocolate buttercream and chill or serve immediately.
