Quick easy vanilla cupcakes ‎


For 9 people

  • ‎1 cup + 2 tbsp all-purpose flour
  • ‎½ cup milk‎
  • ‎1 egg white‎
  • ‎1 egg yolk‎
  • ‎1¼ tsp baking powder‎
  • ‎¾ cup sugar‎
  • ‎1/3 cup butter at room temperature
  • ‎¼ tsp salt‎
  • ‎1½ tsp vanilla extract
  • ‎ 1¼ cup chocolate buttercream‎


Preheat the oven to 180⁰C. Line a cupcake mold with cupcake paper.‎

In a bowl, combine flour, baking powder and salt. Set aside.‎

In your kitchen machine, beat the egg white using the whisk attachment on high speed ‎until stiff peaks form. Put it in a bowl and set aside.‎

Using the paddle attachment, beat the butter until it’s soft and creamy.‎

Add sugar and keep beating until all ingredients are combined.‎

Add the egg yolk and the vanilla essence. Continue mixing until combined.‎

Gradually add the flour mixture and the milk, alternating between them.‎

Fold the whipped egg white into the mixture.‎

Pour the batter into the cupcake molds and bake for 21 minutes.‎

Take the cupcakes out of the oven. Let them cool at room temperature.‎

Decorate with chocolate buttercream and chill or serve immediately.‎
