Manakish zaatar

  • Wheat flour: 500 g
  • Dried baker’s yeast diluted in 35 ml warm water: 5 g
  • Salt: 1 teaspoon
  • Warm water: 300 ml
  • Olive oil: 50 ml
  • Zaatar: 25 g


Put the flour, salt and baker’s yeast in the stainless steel bowl.

Fit the kneader and the lid. Run the appliance for a few seconds on speed 1 and add warm water through the opening on the lid.

Knead for 8 minutes. Leave the dough to rest for 30 minutes at room temperature, in a bowl covered with a damp cloth.

Sprinkle a little flour over the dough if it is sticky, and divide it into 4 equal portions.

In a small bowl, mix the zaatar with the olive oil. Roll out a ball of dough in a Tefal pan without adding fat.

After the dough is rolled out, cover it with the olive oil - zaatar mixture with a brush or a tablespoon.

Cook for 5 minutes over high heat and 5 minutes over low heat.

Repeat with the other 3 dough sections.

Fold the flat bread in half before eating.
