Ground Beef and Potato Casserole
For 4 people
- 1kg boiled & quartered potatoes
- 1 medium-sized onion
- ½ cup butter
- ½ cup frozen & thawed sweet corn
- ½ cup frozen & thawed peas
- 3 medium-sized carrots
- ½ tsp worcestershire sauce
- 700g ground beef
- ½ cup beef broth
- Salt to taste
- Black pepper to taste
- 1 cup grated cheddar cheese
Chop onion & grate carrots respectively in your food processor.
Melt 4 tbsp of butter in a pan over medium heat. Add chopped onion and carrots. Cook for 6 minutes.
When the onion and carrots are tender, add peas and sweet corn. Cook for 4 additional minutes.
Add ground meat and stir until ingredients are combined. Cook for 10 minutes until the meat becomes brown. Season with salt and black pepper.
Add Worcestershire sauce and beef broth. Bring to a boil then lower the heat. Simmer for 10 minutes.
In your food processor, place quartered potatoes, 4 tbsp of butter, some salt and black pepper. Mix until you get a smooth creamy consistency.
Preheat the oven to 200⁰C. Layer the meat mixture in a baking dish then top with mashed potatoes.
Bake for 25 minutes until browned. Top with grated cheddar cheese then bake for 5 additional minutes. Serve immediately.
