Ingredients

For 4 people

  • Oats - 2 cups
  • Butter - 1 tablespoon
  • Thinly chopped onions - 1 cup
  • Thinly chopped coriander - 1 tablespoon
  • Thinly chopped garlic - 3 cloves
  • Sliced leek - 1
  • Grated carrots - ½ cup
  • Milk - 3 cups
  • Salt - To taste
  • Black pepper - 1 teaspoon
  • Cinnamon - 1 teaspoon
  • Chicken stock - 4 cups
  • Corn flour - 2 tablespoons
  • Water - As needed
  • Grated carrots to garnish - 1 tablespoon

Instructions

Melt the butter in a large pot on medium heat then add the onions and the garlic and cook until tender.

Add the carrots and leeks and mix the ingredients for about a minute then add the oats.

Stir for 2 minutes then pour the chicken stock over the ingredients. Cook for 3 minutes.

Mix ¾ cup of milk with corn flour in a small bowl and add the mixture to the saucepan.

Pour in the rest of the milk and stir.

Sprinkle the coriander over the soup and season with salt, black pepper and cinnamon.

Remove the soup from heat and pour half of it in the Moulinex Faciclic Glass Tripl’Ax blender.

Blend the ingredients well until smooth.

Repeat with the remainder of the soup.

Reheat the soup for few minutes.

Pour water as needed to get a slightly liquid and smooth mixture, while stirring to boil.

Garnish the oat soup with grated carrots and serve hot.
