Mushroom Soup Recipe


For 3 people

  • ‏500g fresh mushrooms
  • ‏2 tbsp olive oil
  • ‎1 tbsp minced garlic‎
  • ‎2 tbsp butter‎
  • ‎¼ cup cornstarch‎
  • ‎2 cups chicken broth‎
  • ‎2 cups water‎
  • ‎½ cup cooking cream
  • ‎1 tbsp lemon juice
  • ‎½ tsp salt‎
  • ‎¼ tsp black pepper‎


Wash & slice the mushrooms.‎

Preheat olive oil in a pot and stir fry the garlic until fragrant.‎

Add sliced mushrooms and cook until all the moisture is released and all the liquid is evaporated.‎

Add butter and cornstarch and stir to coat the mushrooms from all sides. ‎

Pour broth and water. Season with salt and pepper and bring to a boil. Simmer mixture over ‎medium low heat until cooked through, around 10 minutes.‎

Process the mixture in the blender until you get a creamy mixture.‎

Return the soup to the pot. Add cooking cream and lemon juice. Simmer for 5 additional ‎minutes. Serve hot.‎
