Mixed qatayef with walnut and chocolate


For 12 people

  • To prepare the qatayef:
  • Flour - 2 cups
  • Ground semolina - 1 tablespoon
  • Baking powder - 1 teaspoon
  • Yeast - 1 teaspoon
  • Sugar - 2 tablespoons
  • Lukewarm water - 3 cups
  • Vegetable oil to grease the pan - 1 teaspoon
  • To prepare the walnut filling:
  • Walnuts - 1 cup
  • Sugar - 2 tablespoons
  • Orange blossom water - ½ teaspoon
  • To prepare the chocolate filling:
  • Chocolate spread - 4 tablespoons
  • Peeled almonds - 1 cup
  • Pine nuts - ¼ cup
  • Raisins - ¼ cup
  • Chopped dried apricots - ¼ cup
  • To prepare the whipped cream:
  • Cold whipping cream - 200 ml
  • Powdered sugar - 50 g


To prepare the qatayef: dissolve the yeast in lukewarm water and leave aside for 10 minutes.

In the Masterchef 9000 food processor, mix the flour, semolina, baking powder and sugar.

Pour the yeast mixture over the dry ingredients and mix until well combined.

Put the batter aside in a bowl and cover to rest on room temperature for about an hour.

To prepare the walnut filling: coarsely chop the walnuts using Masterchef 9000’s chopping blade.

Put the walnuts in a bowl then add the sugar and orange blossom water. Mix.

To prepare the chocolate filling: in the Masterchef 9000 bowl put the almonds, raisins, apricots, pine nuts and chocolate spread. Chop using the chopping blade.

Grease a pan with oil and put on medium heat. Pour the batter onto the pan, using ¼ scoop for each pancake.

Leave for 2 minutes until done and golden. Put aside in a dish and cover with a towel. Don’t pile the qatayef to keep them from sticking.

Repeat with the remaining batter.

Fill half of the qatayef with walnuts and pinch the edges together to form a crescent.

Seal the rest of the pancakes from one side by pinching on the edges. Fill with chocolate mixture.

Mix the whipping cream with powdered sugar in the bowl with the whisk. Mix the ingredients on high speed until the cream thickens.

Garnish the chocolate qatayef with whipped cream.
