Carrot Marble Cake Recipe
For 10 people
- 400g peeled carrots
- ½ cup sugar
- 1¼ cups vegetable oil
- 4 eggs
- 2¼ cups multi-purpose flour
- ¼ cup cocoa powder
- 1 tsp baking powder
- ½ tsp salt
- 2 tbsp icing sugar for serving
Combine oil, eggs, carrots and sugar in ULTRABLEND +. Blend ingredients on speed 4 until you get a smooth mixture.
Sift flour, baking powder and salt in a bowl. Add the carrots mixture and mix until ingredients are just combined.
Pour half of the batter in a greased 20-cm cake pan.
Sift the cocoa powder over the other half of the cake batter and mix until you get a homogeneous mixture. Pour mixture in the cake pan.
Using a fork, try to combine the batters until they slightly overlap. Bake the cake in a pre-heated oven at 180⁰C for 25-30 min until done.
When cooled, sprinkle with icing sugar and serve.
