Quick and easy Ramadan Iftar recipes

Iftar time comes with lots of challenges in term of new quick and easy cooking ideas. Keeping that in mind, here are 4 recipes that you can effortlessly have ready in no time.

Cheese stuffed fried potato balls

In Maserchef 8000, process 4 boiled & peeled potatoes, 2 strands of green onions, 4 walnuts, 1 egg, 2 garlic cloves, 1 tsp of salt and 1 tsp of black pepper. Shape into palm-sized patties, fill each one with 2-3 small cheese cubes and shape into a ball. Beat 2 egg yolks in a dish. Place 1 cup of flour and 1 cup of breadcrumbs in 2 dishes. Dip potato balls respectively in the flour, egg yolks & breadcrumbs. Deep fry for 2-3 minutes until golden from all sides.

Chicken Arayes

Preheat your oven to 200⁰C. In the food processor bowl, pulse 1 Kg of boiled chicken breasts, 2 small onions, 1 cup of parsley, 4 cloves of garlic, ½ tsp of cayenne pepper, 1 tsp of ground allspice, 1 tsp of black pepper, 1 tsp of ground cinnamon, 2 tsp ground cumin, 2 tbsp of ground coriander and 2 tsp of salt. Place ¼ cup of the mixture on one side of a pita loaf. Fold the pita loaf over the kofta mixture. Place the stuffed pita loafs on a baking sheet and bake for 5 to 10 minutes.

Caesar Salad

In the food processor, chop 3 lettuce hearts and transfer to a bowl. Shred 150 g of parmesan cheese in your food processor as well. Add 1 cup of halved cherry tomatoes, 3 cups of croutons and 500g of boiled chicken breasts cut into cubes. Drizzle 1 cup of Caesar dressing and mix well until combined.

Hummus with spiced beef

Boil 1 cup of overnight soaked chickpeas and place in your food processor jug. Purée with 1/3 cup of cooking liquid, 1 garlic clove, 2 tbsp of lemon juice, 2 tbsp of tahini, a pinch of salt and ½ tsp of black pepper. Transfer to a serving dish. Heat 2 tbsp of olive oil in a skillet and cook 1 tbsp of pine nuts until golden. Transfer to a dish lined with a paper towel, then add 100g of ground lamb meat to the skillet and cook until browned. Spoon the lamb meat and pine nuts onto the hummus and serve.
